Lentil and Chorizo stew


500g lentils, soaked overnight

3 cans tomatoes

5 onions

1 teaspoon coriander

1 teaspoon cumin

3 chorizo sausages, cooked and diced

500ml stock

Fry the onions, cooking till caramelised, before adding the coriander and cumin.  Add the tomatoes and chorizo sausages.  Then add the stock and lentils, and cook the stew until the lentils are soft.  You can add ingredients to suit your own tastes, whether they are potatoes or carrots.
